    Recipe adapted from The TrophyWife Style. My son has been telling me this week he needed more food in his lunch. I thought I was doing a good job keeping him full and happy, but it looked like I needed to step it up a notch. The first thing I thought to make was something with oats.     Peach Muffins

    Recipe adapted from Karen’s Kitchen Stories. Ingredients- 6 tbsp unsalted melted butter 1 tsp vanilla 1 large egg, room temperature 3/4 c. buttermilk or sour cream 1 c. diced unpeeled peaches (3/4 c. in the batter, save remaining 1/4 c. to put on top before baking) 1 3/4 c. unbleached all purpose flour 1/2 c. granulated white sugar 2 tsp. baking powder 1/4 tsp. baking soda 1/4 tsp. salt course sugar (optional) Directions- Preheat oven to 375.     Recipe adapted from Mrs.Parker II from Allrecipes.com When cherries season comes, I get so excited! Besides eating them as they naturally are, I love to add them in cookies, pies, and muffins. This muffin recipe is a hit with my family and I. Ingredients- 3/4 c. white granulated sugar 1 1/2 c. all purpose unbleached flour 1/2 tsp. salt 2 tsp baking powder 1/3 c. vegetable oil 1/3 c. milk 1 egg- beaten 1/2 tsp. almond extract (necessary!) 1 TBSP white granulated sugar 1 c. pitted/quartered cherries Directions- Preheat oven to 400 degrees.
